This cheesecake is so tasty you wouldn't believe it's vegan! It's rich, creamy and absolutely divine. I used to love eating cheesecake as a child and I'm so happy that I have created the most perfect recipe that is fully vegan. 


For the base:
🌱300g of dairy-free digestive biscuits
🌱5 tbsp of vegan butter
🌱2 tsp of sugar
🌱2 tbsp of agave syrup

For the filling:
🌱400g of vegan soft cheese
🌱Dark chocolate (150g), melted
🌱2 tsp of sugar
🌱125ml of viocreme
🌱1 cup of blackberries

1. In a high speed processor, start by blending the biscuits, sugar and butter.
2. Wash out the blender and use it to blend the soft cheese, sugar, viocreme and melted dark chocolate together for the filling.
3. Using a round tin, press the biscuit base into the bottom of the tin. Make sure it is even and pressed down firmly then refrigerate while you make the filling.
4. Finally, spread the filling on top of the biscuit base. Add the blackberries on top.
5. Refrigerate for a few hours and then enjoy!
