This one-pot stew is super tasty, nutritious and filling. I’ve also added kale and broccoli which are so powerful! Butter beans are also a GREAT meat-alternative to vegans. They’re super high in protein and have lots of other benefits.

What ingredients would you add in your stew?

◽️Ingredients
- 1 sweet potato
- 3 cloves of garlic
- 1 onion
- 1 can of tinned tomatoes
- 1 cup of butter beans
- A handful of cherry tomatoes
- Broccoli
- Kale
- 2 celery sticks
- 2-3 tsp of curry powder
- 1 tsp of paprika
- Salt & pepper to taste
- 2 tsp of all purpose flour
- 1 /2 cup of soya milk
- Chilli flakes

◽️Method
1. Preheat the oven to 200degrees
2. Chop up your sweet potato, drizzle some olive oil, add paprika, salt and pepper. Bake for 20 mins.
3. In a frying pan over medium heat, fry the onion and garlic for 2-3 mins.
4. Add the tinned tomatoes, chopped tomatoes, butter beans, chopped celery and soya milk. Mix in the paprika & curry powder.
5. In a saucepan, boil the broccoli for 10-12 mins.
6. Once the sweet potato has cooked, mash it and add into the curry. Add in the 2 tsp of flour to thicken your curry. If necessary, also add some more soya milk.
7. Once the broccoli is tender, chop it up and add into the curry. Finally, add your kale and mix well with the rest of the ingredients. Cook for 2-3 more minutes.
8. Serve with some delicious basmati rice mixed in with coconut butter. Add some chilli flakes, salt and pepper, if needed.
