This mac n cheese is so creamy and it was very easy to make! Perfect comfort food for cosy nights in at home.

◽️Ingredients

For the bread crumb toppings:
- 400g panko crumbs
- Chopped parsley 🌿

For macaroni and cheese:
- 1/2 packet vegan margarine
- 100g all-purpose flour
- 800g soy milk
- 400g macaroni
- 400g Follow Your Heart dairy-free finely shredded cheddar

◽️Method

Preheat oven to 200degrees.

1. In a pan over medium heat, melt the margarine. Add flour and whisk in to mix. Cook for 1 minute, whisking continually. Gradually whisk in soy milk and simmer, mixing occasionally, for 3 minutes. Sprinkle in cheese and stir until smooth and melted.

2. Cook macaroni in a pot of boiling water according to the package instructions. Drain in a large colander and transfer to a large bowl. Stir in cheese sauce and salt to taste.

3. Sprinkle with bread crumb toppings and some parsley.

Bake casserole in the oven for 30 minutes.
Once it’s done, sprinkle some pepper & add some more fresh parsley 🌿 .
