Hello lovelies, today I have a really delicious and simple recipe for you all. Perfect for lunch or dinner 💚 Who else loves courgettes?

I also had a tasty garlic and yogurt sauce to go with it. See below on how to make 🤍

▫️Ingredients
🌱3 courgettes
🌱220g of plant-based mince. I used the one by @vivera
🌱1 garlic clove, finely chopped
🌱2 tsp of olive oil
🌱1/2 a can of tinned tomato
🌱1 tsp of cumin
🌱1 tsp dried oregano
🌱1 small red pepper, chopped
🌱1/2 a small onion, chopped
🌱40g of vegan cheese, grated
🌱Salt & pepper
🌱Fresh dill & parsley to garnish

▫️Method
1. Preheat the oven to 200degrees. Start by cutting the courgettes in half and scoop out the middle part. Chop the inside of the courgette and save it for later. Arrange the courgette in a large greased baking tray.
2. In a pan heat up the oil and fry the onion and garlic for 2-3 mins. Add the plant based mince along with the dried oregano, cumin, tinned tomatoes, the inside of the courgette and chopped red peppers. Add 80ml of water and simmer, covered, for 10 mins.
3. Add the plant-based mixture into the courgette shells. Cover with foil and cook in the oven for 10 minutes. Then remove the foil, sprinkle with the cheese and and cook, uncovered, for another 10 minutes.

To make the garlic & yogurt sauce:

🌱Dairy-free yogurt (1 and 1/2 cup). I absolutely LOVE the @alpro Greek style yogurt as it’s so creamy 😍 The @koko yogurts are also another great alternative.
🌱3 cloves garlic (minced)
🌱 1/2 a lemon 🍋 (squeezed)
Mix all the ingredients above with a spoon and enjoy!
