I absolutely loved making and eating this salad. It was so fresh and light (but also very filling), just what I needed when the weather is currently so hot ☀️

I cooked some mixed quinoa and added in spinach, pomegranate and cherry tomatoes. I topped up with pumpkin seeds for added protein and healthy fats. I added some lemon juice, olive oil, ground black pepper and sea salt. Simple and nutritious ✨
