I’ve been craving sweet stuffed potatoes and these were so delicious and SO SWEET! 😋 I got them from Aldi and they did not disappoint. Sweet potatoes are an excellent source of beta carotene, vitamin C, and potassium.

🤍Garlic Yogurt Dip🤍
Mix dairy-free yogurt (I used @alpro plain and unsweetened one), crushed garlic, 1tsp olive oil, some lemon juice and dill together. Add 1/2 a teaspoon of salt and pepper.

▫️Ingredients (for 2 people)
🌱 Vegan mince (110g)
🌱1 medium onion
🌱3 cloves of garlic
🌱1 can of red kidney beans, washed and drained
🌱1 bell pepper
🌱 1 small can of sweetcorn
🌱fresh dill🌿
🌱2 tsp of smoked paprika
🌱1/2 a lime, squeezed
🌱Salt and pepper, to taste

(Prep 5 mins / Cook time: 45 mins)

Preheat the oven to 180degrees. Place the sweet potato to cook in a tray with some olive oil and water .
2. Over medium heat, add some olive oil (or water for an oil-free option) then add the chopped onion and garlic to fry for 2-3 mins.
3.Next, add the vegan mince, peppers, sweetcorn, beans and seasonings. Add some water then let it simmer for 10 -12 mins.
4. After 30 mins, check to see if the sweet potato is soft. Slice it in half and fill with the chili. Sprinkle some dill and serve with guacamole and the garlic yogurt sauce.
