This pitaya and yogurt layered chia pudding is perfect for breakfast. Pitaya is a super fruit grown in tropic regions of South America and South East Asia. It is perfect for smoothies, chia puddings, lattes, baked goods, and more!

Ingredients (makes 2 puddings):

  • Chia seeds (1/4 of a cup)
  • Almond milk/ other plant-based milk (200ml)
  • 4 tsp of plant-based yogurt
  • Pitaya powder (1.5 tsp)
  • Your favourite toppings.


  1. Add chia seeds and almond milk in a bowl. Leave to soak in the fridge for 2 hours.
  2. In one bowl, add a spoonful of Pitaya powder to the soaked chia seeds and mix well. In another bowl, mix the chia with the yogurt.
  3. Add the first two layers of chia and the third layer of yogurt. I used @alpro Greek Style yogurt. Finally, I topped with some banana and cacao nibs 😋
