Pitaya and yogurt layered chia pudding
This pitaya and yogurt layered chia pudding is perfect for breakfast. Pitaya is a super fruit grown in tropic regions of South America and South East Asia. It is perfect for smoothies, chia puddings, lattes, baked goods, and more!

Ingredients (makes 2 puddings):
- Chia seeds (1/4 of a cup)
- Almond milk/ other plant-based milk (200ml)
- 4 tsp of plant-based yogurt
- Pitaya powder (1.5 tsp)
- Your favourite toppings.
Method
- Add chia seeds and almond milk in a bowl. Leave to soak in the fridge for 2 hours.
- In one bowl, add a spoonful of Pitaya powder to the soaked chia seeds and mix well. In another bowl, mix the chia with the yogurt.
- Add the first two layers of chia and the third layer of yogurt. I used @alpro Greek Style yogurt. Finally, I topped with some banana and cacao nibs 😋
