For those of you who like mushrooms, this meal is for you! This dish is so creamy, full of flavour and absolutely delicious.

▫️Ingredients (for 2 people)

🍄250g of chestnut mushrooms
🍄1 medium onion
🍄3 cloves of garlic
🍄64g of cornflour
🍄200ml plant-based milk
🍄50ml vegetable broth
🍄1 tsp of all purpose flour
🍄Salt and pepper to taste
🍄Optional: Nutritional yeast, chopped spring onion & thyme

Prep time: 5 mins/ Cook time: 15 mins)

Chop the garlic and onion then fry with some olive oil or water (for an oil-free option) in a pan over medium heat for 2-3 mins.
2. Add the mushrooms and fry for another minute.
3. Add the cornflour, all purpose flour, veggie broth and plant milk. Stir everything together well until the texture becomes creamy.
4. Cook for 15 mins then season with salt, pepper and thyme.
5. Serve with some cooked rice and garnish with the spring onions/ nutritional yeast/ thyme.
