Spring Kale Salad

A delicious side dish that’s also very healthy. In my salad, I added: Roasted butternut squash, beetroot, cashew nuts and pumpkin seeds. I cooked the kale in some olive oil, drizzled some balsamic and lemon dressing. Add sea salt and pepper, then enjoy ☺️
