This is definitely my favourite meal this week! Chinese is my favourite takeaway so I had to recreate a vegan version of the ‘sweet and sour chicken’ recipe. A healthier recipe that is just as yummy!

◽️Ingredients (for 2 people)
✨Tofu block
✨1/2 cup of cornstarch
✨1/4 cup of water 💦
✨1/4 cup of sugar
✨1/4 cup of ketchup
✨1/4 cup of vinegar
✨2 tsp of garlic powder
✨2 tsp of soya sauce
✨ 1 red onion, sliced
✨ Pineapple 🍍 chunks
✨ 1 cup of chopped up leak and red pepper.
✨ Spring onion
✨ Sesame seeds
✨3 tsp of oil for frying
✨Salt and pepper to taste
✨Serve with white rice 🍚and broccoli 🥦

◽️Method
1️⃣ Cut up the tofu chunks and individually roll them in the cornstarch, some garlic powder and soya sauce (1tsp). Make sure that each tofu piece is well coated. Then, place in a pan to fry with some oil. Fry until the tofu is crispy and set to one side.
2️⃣ In the same pan, fry the onion, leek, red pepper, and pineapple chunks for 3 mins.
3️⃣To make the sauce: mix the ketchup, sugar, garlic powder, vinegar, salt& pepper, water and soya sauce in a small bowl. Then, pour the sauce and mix well with the veggies.
4️⃣ Once the veggies are done, add the crispy tofu in and mix well.
5️⃣ Serve with the rice and broccoli, sprinkle some sesame seeds then enjoy 💚
