Roasted Chickpeas and Avocado Nourish Bowl
A loaded and delicious veggie bowl. So wholesome, filling and perfect for when you're in a rush but want to make something tasty.
Ingredients
🌱1 can of chickpeas
🌱3 tsp of smoked paprika
🌱1 tsp of turmeric
🌱1 tsp olive oil
🌱Salt and pepper to taste
To make the roasted chickpeas:
- Preheat the oven to 180degrees.
- Wash and drain the chickpeas. Then, dry them well with a towel.
- Drizzle some olive oil, add smoked paprika, turmeric and some salt/ pepper to the chickpeas.
- Mix well then place in the oven for 20-30 mins.
Also in my bowl:
🌱Spring greens - cook for several mins over medium heat and drizzle with some sesame oil (or water for an oil-free option). Finally, sprinkle some sesame seeds.
🌱1/2 an avocado Add some olive oil, salt and pepper.
🌱 Tricolour quinoa with pumpkin seeds
🌱Fresh cucumber
