Looking for a healthy and quick recipe that only takes 15 mins?! Chickpea curry’s are one of my favourite things to make as they are so easy to make and very tasty! Served with whole grain brown rice.


🌱1 can of chickpeas, washed and drained
🌱 1 can of tinned tomatoes 🥫
🌱 1/2 can of coconut milk 🥥 (or 1 can if you prefer a creamier option)
🌱 1 large onion
🌱 3 cloves of garlic (or garlic powder)
🌱 2 large courgettes
🌱 Salt and pepper, to taste
🌱1 tsp of curry powder
🌱 Wholegrain brown rice 🍚 (cooked as per the instructions on the packet)
🌱Optional: fresh parsley leaves (chopped)

1. Start by frying the onions and garlic over medium heat for 2-3 mins (with some oil or water for an oil-free option)
2. Chop the courgettes and place them in the pan.
3. Add the chickpeas, tin tomatoes and coconut milk. Cook for 10-15 mins.
4. Sprinkle some salt and pepper. Add the curry powder and mix well.
5. Serve with some rice and enjoy! 💚
