A delicious gnocchi dish with courgettes and homemade vegan pesto. A much healthier alternative to the store bought pesto but tastes just as amazing!

Ingredients for the gnocchi (for 2 people)
🌱Gnocchi
🌱5 tsp of vegan pesto
🌱1 courgette, sliced
🌱Pine nuts
🌱Parmesan cheese (vegan)
🌱nutritional yeast

𝗧𝗼 𝗺𝗮𝗸𝗲 𝘁𝗵𝗲 𝗽𝗲𝘀𝘁𝗼:

✨ 2 cups packed fresh basil (large stems removed)
✨3 Tbsp pine nuts
✨3 large cloves garlic (peeled)
✨2 Tbsp lemon juice
✨3-4 Tbsp nutritional yeast
✨1/4 tsp sea salt (plus more to taste)
✨2 Tbsp extra virgin olive oil
✨3-6 Tbsp water

◽️Method for pesto
To make the pesto, blend all of the ingredients in a blender.

◽️Method for gnocchi
1. Cook the gnocchi for 10 mins, as per the instructions on the packet.
2. In a pan over medium heat, drizzle some olive oil and cook the courgette with the pesto.
4. Add the cooked gnocchi and mix well with the Parmesan cheese 🧀
5. Sprinkle the nutritional yeast, pine nuts and add some sea salt.
