Miso Udon Soup with Tofu and Bok Choy
A delicious udon soup made with tofu and bok choy. Made with simple ingredients and perfect for a quick dinner.
Ingredients (for two people)
🌱Bok Choy
🌱3 cloves of garlic
🌱1/2 tofu block, cut in squares
🌱Udon noodles (200g)
🌱2 spring onions
🌱150g of chestnut mushrooms
🌱1/2 can of sweetcorn
🌱1/4 cup white miso paste
🌱2 tsp of oil
🌱2tsp of soya sauce
🌱Seasonings: salt, pepper and chilli
Method
1. Cook the udon noodles in hot water over medium heat for 5 minutes.
2. In a pan over medium heat, add the chopped garlic and fry in some olive oil. Then, ad the soya sauce and fry the tofu (until crispy and golden) and the mushrooms 🍄 .
3. Add the Bok Choy and cook in the pan for several minutes. If the pan is too dry, add some water / olive oil. After several minutes, remove the Bok Choy from the pan to avoid over-cooking.
4. Add the noodles to the pan. Then, mix the miso paste with hot water and pour into the pan,.
5. Serve the miso noodles in bowls. To finish, add the Bok Choy, sweetcorn and spring onion. Season with some salt, pepper and chilli (optional).
