A 15 minute delicious and healthy lunch idea. I bought lots of ripe avocados from the market and decided to use them in my pasta (before they go off!). It turned out SO good 👅 Who else loves avocado?!

Ingredients
🌱2-3 ripe avocados 🥑
🌱A handful of spinach leaves 🍃
🌱2 garlic cloves
🌱1 tsp of nutritional yeast (optional)
🌱1 tsp of tahini
🌱1 lemon, juiced 🍋
🌱Salt & pepper to taste
🌱Cherry tomatoes 🍅
🌱A dash of soya milk (if needed to make it creamier)
🌱Rocket salad (optional)
🌱Pasta of your choice

Method
1. Cook your pasta as per the instructions on the packet.
2. In a high speed blender, blend all of your ingredients together apart from the tomatoes and rocket salad. Squeeze your lemon 🍋 and blend well.
Your mixture should be nice and creamy.
3. Once your pasta has cooked, add the creamy avocado & spinach sauce into your pasta.
4. Add your rocket leaves, tomatoes and season well.

Voila! So quick and simple. ✨
