Fresh Veggie Spring Rolls with a Peanut Sauce
These spring rolls are so light and absolutely delicious! A recipe made in 15-20 mins! ⏰ I first had these when I went to Vietnam and I loved them so had to re-create them.
▫️Ingredients
🌱Vietnamese rice paper
🌱Carrots
🌱Red cabbage
🌱Red pepper
🌱Spring onions
🌱Lettuce
Optional: tofu, rice vermicelli or brown noodles
🌱Peanut sauce: smooth peanut butter (5 tsp), 2 tsp rice vinegar & garlic powder, 1tsp soy sauce, lime juice, & sesame oil.
▫️Method
1. Dip the rice paper in warm water for 20 seconds to soften them.
2. Chop up the veggies and place them in the rice paper. Roll up to form the spring rolls.
3. To make the peanut sauce: In a small bowl, whisk together the peanut butter, rice vinegar, soy sauce, lime juice, sesame oil, and garlic. Whisk in 2 to 3 tablespoons water to make a super creamy but dip-able sauce.
