This courgette spaghetti is so fresh and perfect as a side dish. Courgettes are naturally lower in calories and contain lots of water so it's a great light dish for spring / summer. 

- 1 large courgette (use a spiralizer to make into spaghetti)
- 200g of cherry tomatoes 🍅
- 2 tsp of olive oil
- 1/2 tsp of crushed chilli flakes 🌶
- 1 tsp of flax seeds
- 1/2 tsp of balsamic vinegar
- Pine nuts & crushed walnuts & hazelnuts
- Salt and pepper, to taste

1. Heat up a pan over medium heat with some oil.
2. Add in all of your ingredients and drizzle the balsamic vinegar and olive oil. Cook for 10 mins.
3. Sprinkle the flax seeds, seeds/ nuts, salt and pepper. Cook for several more minutes or until the nuts are nice and toasted.
