Cinnamon Spiced Cupcakes with Pumpkin Seeds
I love October as It’s such a cosy month, I love Halloween and it’s also mine and my bf’s anniversary this weekend. We have such a fun weekend planned! So much to be grateful for 🤍✨ What are you grateful for?
My house smells amazing the moment I opened my oven. Who else loves cinnamon just as much as me?! 😍
▫️Ingredients
✨1 and 1/2 cups of flour
✨1 tsp of baking soda
✨200g of brown sugar
✨3 tsp of cinnamon
✨Some nutmeg
✨3 tbsp of coconut oil, melted
✨1/2 cup of a plant based milk
✨3 tsp of water
✨Toppings: pumpkin seeds
▫️Method
1. Preheat the oven to 200 degrees.
2. In a bowl, mix in all your wet and dry ingredients together (apart from the pumpkin seeds).
3. Add 2/3 of the mixture into silicone cupcake cases. Sprinkle the pumpkin seeds on top.
4. Bake for 20-25 mins or until the cupcakes are golden.
