This chickpea ‘tuna’ filling has got to be my favourite sandwich and jacket potato filler but also makes a great side dish. It tastes amazing and is a great alternative to fish. It not only tastes delicious but chickpeas are so nutritious.

𝐂𝐡𝐢𝐜𝐤𝐩𝐞𝐚𝐬 𝐇𝐞𝐚𝐥𝐭𝐡 𝐁𝐞𝐧𝐞𝐟𝐢𝐭𝐬

✨They are high in fibre and can lower blood-glucose levels in people with type 1 diabetes. Due to the high fibre, they can also help people with digestive problems.

✨High in calcium, zinc and vitamin K. This contributes the development and maintenance of good bone health.

✨Chickpeas are high in choline which helps with sleep, memory and muscle movement.

🔸Ingredients
🌱1 tin (400g) of chickpeas, washed and drained
🌱1 medium red onion
🌱1 small can of sweetcorn
🌱1/2 a lemon (squeezed)
🌱3 tsp of vegan mayo.
🌱2 tsp of nutritional yeast
🌱Salt and pepper, to taste

🔸Method
After you have washed and drained the chickpeas, mash them up using a fork. Leave some chunks for a better texture.
2. Add the chopped onion, sweetcorn, mayo, nutritional yeast and lemon juice. Mix well.
3. Finally, season with salt and pepper. You are now ready to fill your sandwich!
