This veggie friend rice is such a simple dish bursting with so much flavour! I've added chickpeas which are high in protein and so nutritious. 


  • Basmati white rice (cooked)
  • 1 can of chickpeas
  • 1 tsp turmeric powder
  • 1 tsp of smoked paprika
  • 1 small can of sweetcorn
  • Mange tout
  • 1 cup of peas
  • 2 garlic cloves
  • 1 tsp of olive oil
  • Mixed bell peppers, chopped
  • 3 tsp of soy sauce
  • 1 tsp of lime juice
  • Salt and pepper, to taste
  • Broccoli, to serve (optional)


  1. Cook your rice, as per the instructions on the packet.
  2. In a pan over medium heat, add the olive oil and fry the garlic. Then, add all the vegetables, chickpeas and cooked rice. Squeeze some lime juice. Mix in with the soya sauce, turmeric, paprika and cook for several mins.
  3. Add salt & pepper and serve with some broccoli.
