Tofu, Spinach and vegan feta cheese pastry
These tofu, spinach and vegan feta pastry's are incredible. My grandparents made really amazing pastries so these were inspired by her. The most perfect breakfast or snack!
▫️Ingredients
✨@jus_rol ready-rolled puff pastry 320g sheet
✨1/2 a block of tofu
✨1 medium sized onion
✨3 cloves of garlic
✨200g of spinach
✨300g of @violife_foods Greek white feta cheese, crumbled
✨1 tsp of nutritional yeast
✨Salt and pepper to taste
✨1 tsp of olive oil
▫️Method
1. Heat the oven to 220C/fan 200C/gas 7, and line your largest baking tray with some baking paper.
2. Cut the onion and garlic and place in a pan to fry over medium heat for 3 mins.
3. In a mixing bowl, crumble the tofu and vegan feta cheese. Cut the spinach and add to the bowl. Season with salt/ pepper and nutritional yeast.
4. Place the tofu, cheese and spinach in the pan to cook for several mins until the spinach has wilted.
5. Roll out your puff pastry then cut into two rectangles. Add your mixture in the middle of one of the pastry sheets. Place another sheet on top of the spinach mixture and use your fingers to press down and seal the edges around the mixture. Then, use a fork to press down the edges and seal it down further.
6. Brush the top of the pastry with some olive oil and sprinkle some salt/ pepper.
7. Cut the pastry into smaller chunks then place in the oven to bake for 20-25 mins until they are golden and puffy!
