Creamy Mushroom and Pea Pasta
This pasta is so creamy and such a comforting meal. It's delicious, simple and easy to make. What's not to love?!
Ingredients
- Pasta for 2 people
- 100g if chestnut mushrooms
- 1 cup of frozen peas
- 2 tbsp of all purpose flour
- 2tsp of lemon juice
- 2 cups of soya milk @alpro
- 3 garlic cloves (minced)
- Salt and pepper to taste.
- 1 tsp of oil
Method
- Cook your pasta (as per the instructions on the packet)
- Heat your oil in a pan over medium heat. As the oil has heated up, add your flour and whisk / stir thoroughly so there are no bits.
- Add the soya milk and lemon juice all at once and continue to stir
- Add the minced, garlic, chopped mushrooms and peas. Cook for 10-15 mins until your sauce has thickened. If it’s not thick enough, add some more flour and stir in with the soya milk.
- Mix the sauce with your pasta. Season with salt and pepper.
