A warming and delicious soup. Perfect for cosy nights in! Sweet potatoes are so nutritious. They are an excellent source of beta carotene, vitamin C, and potassium. 

🔸Ingredients
Prep time: 5 mins/ Cook time: 25 mins

🌱4 medium carrots, chopped
🌱1tsp of olive oil
🌱3 medium sweet potatoes, peeled and chopped
🌱2 white potatoes, peeled and chopped
🌱2 garlic cloves
🌱1 onion
🌱1 1/2 piece of ginger, minced
🌱3 cups veg broth
🌱Salt, to taste
🌱Optional garnish: pumpkin seeds, spring onion, chilli flakes and black pepper.

🔸Method

Heat a large pot with olive oil over medium heat. Add the onions & garlic and let them cook for 2-3 mins.
2. Add the sweet potatoes, white potatoes, carrots, ginger, salt and broth. Cover the pot and boil for 20-25 mins or until the potatoes are soft.
3. Then, transfer everything to a blender and blend until smooth (I do this in 4 batches as my blender is small).
4. Finally, add some pumpkin seeds, chilli flakes and black pepper. Serve with fresh bread or top with spring onion/ coconut milk.
